Disappearing into extremely isolated locations has always been one of our favorite ways to RV. Since we try to eat healthy, that means stocking up on fresh food. As a residential refrigerator is a relatively recent phenomenon for us, we know what “limited fridge space” is all about on most RVs.
Even though we snowbird in the Southwest most winters, mornings can be plenty cold in the desert. So a hot, hearty breakfast made from healthy ingredients that require no refrigeration is great for winter mornings.
Since our recipe works equally well as a stove-top meal or in the microwave, it makes a perfect start to your day whether you’re dry camping or hooked up. When we have power available (shore power, running the generator for other purposes anyway, or enough juice in our battery bank), we use the microwave. When we’re off the grid and not planning to run the generator in the morning, we just use our propane stovetop and voilà! A warm, hearty, delicious start to our cold winter mornings.

40g Oat Bran (often found in the bulk foods section)
475g Almond Milk (or use any type of milk desired)
21g Honey (or substitute one ripe banana, sliced. Mmmmmm)
Combine all ingredients except the honey into a medium-size pot/saucepan and stir together. Add honey. Heat on low-to-medium setting, stirring occasionally, for about 10 minutes, or until thickened to desired consistency. Divide into two bowls. Mix in cinnamon to taste. Enjoy!
Combine all ingredients except the honey into a microwave-safe bowl and stir together. Add honey. Microwave on high for 6 minutes (based on our 1,500-watt oven. Adjust as needed). Divide into two bowls (or reduce clean-up and save water by having one person eat right out of the mixing bowl). Mix in cinnamon to taste. Enjoy!
